Fiancé adores his key lime pie (and I adore the pretty green color). Everywhere we go for dinner, he asks if they have it on the menu come time for dessert, and we will drive an hour to one of our favorite spots that serves the peeerfect slice. Last night as we were finalizing our registry, we added a pie pan and server to our list... so I can make key lime pie for us, of course. I can't wait to try the recipe below and see how I do...
Ingredients:
9" graham cracker pie crust (Thank goodness we will have the proper pan now!) 14 oz. can of sweetened condensed milk
3 egg yolks (whites not used)
½ cup Nellie & Joe's Key West Lime Juice
Combine milk, egg yolks and lime juice. Blend until smooth. Pour filling into pie crust and bake at 350º for 15 minutes. Allow to stand 10 minutes before refrigerating. Just before serving, top with freshly whipped cream, or meringue, and garnish with lime slices.
Sounds pretty simple, right? For Fiancé's sake and in the name of endless years of marital bliss, let's hope I can master this one...

ReplyDeleteYum! I just had a key lime cupcake yesterday!!! Have you ever tried Key Lime Pie on a stick? It's dipped in chocolate and frozen. AMAZING! We always bring coolers of them back with us from the Florida Keys!

ReplyDeleteI'm with Fiance in that I adore key lime pie too! I've made a similar recipe, and it's very easy. You can totally master it! Just be sure to make the pie crust, rather than buy one pre-made (which you'll have to do if you use your pie plate!). It's really simple (you can get a recipe on the box of graham cracker crumbs) but it tastes so much fresher. Oreo crust is also surprisingly good with key lime pie.
ReplyDeleteIt's even better with fresh key limes, rather than the bottled juice, which you can get at any grocery store now.
Now I'm craving key lime pie myself. Maybe I'll make one for Memorial Day . . .
